carrot cake oatmeal
Ingredients:
1/2 cup of oats
1 tbsp chia seeds
2 tbsp crushed walnuts (I used chopped almonds)
1/2 carrot, grated
1/2 apple, grated
pinch cinnamon
pinch nutmeg
2 tbsp sultanas (I used a chopped medjool dates)
1/3 cup almond milk (I used 1/2 cup coconut milk)

Method:

1. Mix all ingredients together and transfer to a bowl (I mixed in a bowl from the start)
2. Refrigerate for 2 hours or overnight (I went for a shower and then ate it)
3. Serve by itself or top with coconut yoghurt (I did not do this)
